Tuesday’s Treat: Fluffernutter Bites

Ingredients
- Three teaspoons of freeze-dried strawberries
- Three teaspoons of powdered peanut butter
- ¾ cup of oat flour
- Three large eggs
- ½ cup of pureed pumpkin
Instructions
- Preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper.
- Add freeze-dried strawberries, powdered peanut butter, and oat flour in a blender or food processor. Blend the mixture until it is thoroughly combined.
- Separate the eggs and place the egg whites in a mixing bowl. Whip the egg whites with a whisk until the mixture is fluffy and has tripled in volume.
- Add the pureed pumpkin to the meringue in three parts. Refrain from over-mixing.
- Fold in the dry ingredients and mix gently until evenly distributed. Transfer the meringue mixture to a piping bag.
- Squeeze the mixture onto the baking sheet with parchment paper. This recipe will yield roughly 100-120 meringues.
- Place the baking sheet in the oven and bake for 30 minutes.
- Remove the baking sheet from the oven and allow the meringues to cool completely.
