Tuesday’s Treat: Sweet Potato Casserole

Welcome to our Tuesday Treat article of the week. We are excited to teach you how to make a healthy and fun treat recipe for your four-legged friend! On the menu today is Sweet Potato Casserole. Ingredients 

  • 1/2 cup of shredded unsweetened coconut
  • Two sweet potatoes
  • Two large carrots
  • One apple
  • One can of low-sodium kidney beans (drained and rinsed)
  • Two tablespoons of coconut oil

Instructions 

  1. Preheat the oven to 350 degrees.
  2. Spread coconut flakes on a parchment-lined sheet pan and bake until golden brown (about 5 to 10 minutes).
  3. Wash, peel, and roughly chop the sweet potatoes, carrots, and apple.
  4. Steam the vegetables until soft and then let them cool enough to handle.
  5. Rinse kidney beans for two minutes and drain to remove as much sodium as possible.
  6. Place the beans and vegetables into a food processor and pulse to combine.
  7. Drizzle in the coconut oil, add the spices and pulse until combined.
  8. Plate your casserole in a serving dish and sprinkle with toasted coconut to garnish.
