Tuesday’s Treat: Sweet Potato Casserole

Ingredients
- 1/2 cup of shredded unsweetened coconut
- Two sweet potatoes
- Two large carrots
- One apple
- One can of low-sodium kidney beans (drained and rinsed)
- Two tablespoons of coconut oil
Instructions
- Preheat the oven to 350 degrees.
- Spread coconut flakes on a parchment-lined sheet pan and bake until golden brown (about 5 to 10 minutes).
- Wash, peel, and roughly chop the sweet potatoes, carrots, and apple.
- Steam the vegetables until soft and then let them cool enough to handle.
- Rinse kidney beans for two minutes and drain to remove as much sodium as possible.
- Place the beans and vegetables into a food processor and pulse to combine.
- Drizzle in the coconut oil, add the spices and pulse until combined.
- Plate your casserole in a serving dish and sprinkle with toasted coconut to garnish.
